Copycat recipe for the Starbucks Pumpkin Loaf |
Ingredients
- 1 stick butter, softened
- 1 cup sugar
- 1/4 cup brown sugar
- 2 eggs
- 1 cup canned pumpkin
- 1 teaspoon vanilla
- 1 1/2 cup all purpose flour
- 1 1/2 tablespoons pumpkin pie spice
- 1 teaspoon baking soda
- ~1/2 teaspoon salt
- Roasted pumpkin seeds, or raw pepitas (found in the bulk food area)
Directions
If you buy raw pumpkin seeds (pepitas), roast them as follows:
- Pre-heat oven to 350.
- Toss 1 cup pepitas with 1/2 teaspoon olive or avocado oil.
- Add salt.
- Spread in single layer on baking sheet.
- Roast for 10-20 minutes, stirring once or twice. They will start to pop a little.
- Taste and add more salt if needed while they're still warm.
Cream butter and sugars in stand mixer for about 5 minutes. Add eggs one at a time. Add pumpkin and vanilla. Mix. It will try to separate at this point, but mix as best you can.
Separately, wisk together flour, pumkin pie spice, baking soda, and salt. Add 1/2 of it to the wet ingredients and mix. Add the rest of the dry ingredients and mix.
Pour batter into a greased loaf pan and sprinkle with pumpkin seeds. Bake at 350 for 50-60 minutes.
